Home Fries On The Grill

  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. Spread a piece of aluminum foil on a work surface. Arrange potatoes, onion, bacon, and garlic in the middle of the foil. Drizzle olive oil over potato mixture and season with salt and pepper; toss to coat. Wrap foil around potato mixture to form a packet.
  3. Place packet on the preheated grill and cook until potatoes are tender and bacon is cooked, about 15 minutes. Carefully open packet by slicing foil with a knife.

  • I like Yukon Golds for my potatoes, but use what you like.

It was nice to grill our entire meal, but the bacon never got done (and I used thin bacon, for just this reason). The potatoes and onions were almost overdone when I waved the white flag for the bacon. Aside from the bacon issue (which may just be me), these flavors were just ok for me. I prefer roasted potatoes. THANKS for the recipe (and a cool kitchen ;) )!
