2 (3 ounce) packages lime gelatin
5 cups boiling water, divided
4 cups cold water, divided
1 (3 ounce) package lemon gelatin
1/2 cup miniature marshmallows
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1 (8 ounce) can crushed pineapple, undrained
2 (3 ounce) packages cherry gelatin

DIRECTIONS
In a bowl, dissolve lime gelatin in 2 cups boiling water. Add 2 cups cold water; stir. Pour into a 13-in. x 9-in. x 2-in. dish; refrigerate until set, about 1 hour.
In a bowl, dissolve lemon gelatin in 1 cup boiling water. Stir in marshmallows until melted. Cool for 20 minutes. In a small mixing bowl, beat cream cheese and mayonnaise until smooth. Gradually beat in lemon gelatin. Stir in pineapple. Carefully spoon over the lime layer. Chill until set.
Dissolve cherry gelatin in 2 cups boiling water. Add the remaining cold water; stir. Spoon over the lemon layer. Refrigerate overnight. Cut into squares.

Kids didn't like the cream layer at all. All the adults thought it was wonderful. Would have thought it would have been the other way around! Looks fancy in a trifle bowl.

This is a really easy recipe to make and a nice alternative to serve with all the other heavy holiday items that are usually around. I made this for two different family gatherings. First time, in my haste I forgot to add the pineapple in the middle layer so I just carefully spread it on top before putting the cherry layer on and didn't make much difference except showing through a little. Also, unless you have a pan with high sides, I learned it's a good idea to pour the last layer in with the pan in place in the refrigerator. Even with being very careful, I still managed to spill some of the cherry layer, on the floor and on myself. A nice staining red color! Next time, I had the pan already in the fridge and I just poured it in with one of my large glass measuring cups with a spout. This dish could easily be adapted for other holidays using different color gelatins.

I found this recipe in Taste of Home quite some time ago, and it's been on the menu for every Christmas since, sometimes I even cheat and make it no matter the season, because it's soooo good!!

I made this for our Christmas dinner this year and thought it was a pretty alternative to the "fluff" salad that I usually make. The kids gave it mixed reviews...some loved it & some didn't like the middle layer. Like one of the other reviewers, I spilled it setting it in the fridge the last time. Her idea about pouring the last layer with it in the fridge is probably a good one. I would make this again.

The kids did not like the middle layer. I used strawberry jello for the top layer instead of cherry. All in all it was a pretty good recipe.

Great recipe and easy to make. I modified the recipe by halfing the green and red layers, I used a vegan cream cheese substitute (milk allergy) and cut the mayo to 1/2 of the recommended amount. Everyone, including kids, loved it.
