No-Bake Holiday Fruitcake

Easy fruitcake that doesn't require baking. You can use mixed candied fruit instead of the cherries and pineapple. In fact, any other type of candied fruit works just as well.

This refreshing dessert will disappear in a hurry at your next get-together. 'My mother used this recipe more than 60 years ago, but she called it 'Icebox Cake' because we didn't have a refrigerator,' recalls Marietta Martin from Brazil, Indiana.

This recipe lets you use up left-over sweet potato. The cake is very moist, so you don't really need icing. Better yet, if you have left-over sweet potatoes from Thanksgiving, freeze them, and make this cake for Christmas. The whipped sweet potatoes I use already have some butter and sugar, so I only use 1 3/4 cups of sugar in the batter, but adjust the sugar amount to your liking.

Texas Pecan Candy Cake

This cake should be made at least two weeks ahead to allow the flavors to blend. Hint: I cheat and use the date pieces coated with sugar (instead of regular pitted dates), just taking off most of the sugar by rubbing them in my hands.
