This was a little dry the day after I made it for a party. I did add about a 1/4 cup more of mayo before spreading on croissants. Very tasty. Even better the next day.

YUM! :) Definitely a keeper! I only used about 3/4 c. of dried cranberries/craisins and then next time would probably lessen the amount of paprika a little bit.

Yum Yum! I'm a busy teacher/mom, so I used a rotisserie chicken from my grocery store, substituted halved, seedless red grapes for the cranberries (thinking my 2 yr. old would find the craisins more difficult to swallow), and omitted the onion. I had more than the 4 cups of chicken, so i eye-balled other ingredients and did add garlic powder to the mayo. Both of my boys (6 and 2) loved this with Ritz crackers and asked for seconds. My six year old even asked that I pack it for his school lunch. I loved it on toasted ciabatta bread with lettuce. This is such a keeper.

I would go with some other reviews and pre-season the chicken to add a little flavor. I used grapes instead of cranberries. Poultry seasoning and little less seasoning salt then what calls for. Tastes better after sitting awhile and soaking in flavor! Pretty tasty chicken salad recipe, Thanks!!

I had some leftover chicken that I didn't know what to do with. I saw the picture of this recipe on the daily voting, and knew I had to make it. I left out the green bell pepper, because I don't care for them. I also added a dash of garlic powder, and it was first class! I will be making this one again. Thanks.

This is excellent! I used candied pecans and they were DELICIOUS!! To candy your pecans, all you do is put a cup of pecans in a saucepan over high heat and add about 1/2 cup of sugar. Stir frequently, and once all the sugar is melted, they are done. Careful not to over cook them as they burn easily. I take my pan off the stove when the sugar is ALMOST dissolved, then just keep stirring while the rest dissolves. Place the pecans on a piece of wax paper to cool for about 10 minutes, then chop up and add the the salad!!

I served this at an Arbonne party rolled up in tortillas and cut into bite size pieces and everyone enjoyed it and wanted the recipe. I substituted pecans for cashews only because that's what I had at home. This has a nice flavor and shouldn't be made only during the holidays for sure!

FANTASTIC! I substituted sunflower seeds for pecans and omitted the green bell pepper. We served it in a wrap with fresh baby spinach. The next day we made sandwiches. I can't wait to make it again.

This is just the BEST chicken salad I have ever made or tasted. I made wraps with the spinach wraps you get at the store, and it was AWESOME! I did it EXACT as is, and it was perfect. This is for sure one I am holding onto!

Very good. Served it at our Christmas party and they held up very nicely on the buffet (sandwich did not get soggy). I will mince green pepper next time which is just a personal preference I and will make it ALL YEAR ROUND.

I left out the green onions and bell peppers since my kids don't like those much. We liked it quite a bit. One kid didn't like it as much as what I usually make. One kid liked it better. Can't win.

If I could give this recipe six stars, I would. This is the best chicken salad I have ever had! I had about a cup of chicken left from my "Roast Sticky Chicken" from this site. I quartered the recipe and followed it to a "T", except for the peppers (I was out). I served it on a bed of baby salad greens. I can easily see myself serving this to company.
