Herbed Twice-Baked Potatoes

2 medium baking potatoes
1 1/2 ounces reduced-fat cream cheese, cubed
1 tablespoon snipped chives
1/4 teaspoon salt
1/4 teaspoon dried basil
dash cayenne pepper
3 tablespoons fat-free milk
3 teaspoons butter, melted and divided
1 dash garlic powder
1 dash paprika

DIRECTIONS
Scrub and pierce potatoes. Bake at 375 degrees F for 1 hour or until tender. Cool for 10 minutes. Cut potatoes in half. Scoop out pulp, leaving a thin shell.
In a bowl, mash the pulp with cream cheese, chives, salt, basil and cayenne. Add milk and 1-1/2 teaspoons butter; mash. Spoon into potato shells. Drizzle with remaining butter; sprinkle with garlic powder and paprika. Place on an ungreased baking sheet. Bake for 15-20 minutes or until heated through.

Nutritional Analysis: 1 potato half equals 150 calories, 5 g fat (3 g saturated fat), 15 mg cholesterol, 234 mg sodium, 23 g carbohydrate, 2 g fiber, 4 g protein. Diabetic Exchanges: 1-1/2 starch, 1 fat.

i've made this several times already and its still so good. one difference i did was after rubbing with olive oil (suggested) i sprinkled with garlic salt and it made for a nice salty skin. also added real bacon bits and shredded cheese

This is the first recipe I gave 5 stars too!! These were sooooo delicious! I added more butter, chives, and cream cheese. I followed another posters tip and rubbed olive oil for the first part of baking for a better taste and crisp. I added shredded cheddar cheese to the last 5 minutes of baking. I will make over and over again!! Thanks so much!!

these are the best ive ever had !there like a resturants.omg there the best!i wasnt sure if i should try them because they hadnt been rated yet.but it was all worth it.try them tonight!!!!!!!!!

These were soooo good! I added a bit more than 1 dash of cayenne and used paprika, garlic pepper and fresh ground black pepper rather than just paprika and garlic powder to top. Very creamy but not too cream cheesey. Will certainly be making again and again!

These potatoes were so tasty and easy, I used 3 medium potatoes and followed the directions. Once I tasted them they just didn't seem quite right so I went by taste before stuffing them into their skins. The result: 3 Potatoes,6 oz of cream cheese and 4 tablespoons of butter. Now for the drizzle part, I drizzled a bunch of butter on the tops of each spud. When we sat down for dinner there was no need to add more butter or sour cream to the potatoes. Turned out excellent.

I made this last night with my boyfriend and they turned out really well! I made some changes to the recipes based on what past reviewers said and added some extra butter and cream cheese. I wound up using a flavoured cream cheese (chive and garlic) and added extra cayenne pepper, garlic powder, and salt. The result was a super creamy, extremely flavourful twice baked potato! I highly recommend this recipe to anyone looking for a new take on a old classic.

Really good and I'm picky! I did what other reviewers suggested. I doubled the chives (and I used freeze dried) and used more butter. I also used garlic powder and pepper. These are restaurant quality. Thanks for a great recipe!!!
