I brought this as my dish to pass for Easter dinner. It was fast, easy to prepare, and very forgiving with my "approximate" measurements. The apricots lost a bit of their sweetness during cooking so they weren't overpowering, balancing nicely with the herbs.

What a wonderful dish! Colorful and flavorful! I served it to my family for Christmas Eve dinner and it was a hit!

A nice change for cooked carrots. I was preparing with my toddlers in mind more than my husband and I, but I really liked them and so did the boys. I used some fennel bulb slices that I threw in with the carrots and apricots part way through since I didn't have fennel seeds. Next time I'll add more apricots.
