Ingredients

  • 1 pound cooked peeled shrimp, chilled
  • 3 green onions, coarsely chopped
  • 1 small onion, coarsely chopped
  • 1 tablespoon chopped fresh tarragon
  • 1 1/2 teaspoons dried parsley
  • 1 teaspoon minced fresh rosemary
  • 1/2 teaspoon chili powder
  • 1 teaspoon lemon juice
  • 1 tablespoon finely grated carrot
  • 1 cup low-fat mayonnaise
  • 1 cup low-fat sour cream
  • salt and pepper to taste

Directions

  1. Add shrimp, green onions, onion, tarragon, parsley, rosemary, chili powder, and lemon juice to the jar of a blender or food processor; process the mixture until shrimp are finely chopped.
  2. Scrape the chopped shrimp mixture into a bowl and stir in the carrot, mayonnaise, and sour cream, mixing until well blended. Season to taste with salt and pepper. Chill at least 1 hour before serving.
