1 cup uncooked orzo pasta
2 cups frozen corn, thawed
1/2 cup chopped sweet red pepper
1/2 cup grape or cherry tomatoes
1/2 cup pitted Greek olives, halved
1/4 cup chopped sweet onion
1/4 cup minced fresh basil
2 tablespoons minced fresh parsley
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
Cook pasta according to package directions; drain and rinse in cold water. Place in a large serving bowl; add the corn, red pepper, tomatoes, olives, onion, basil and parsley. In a jar with a tight-fitting lid, combine the oil, vinegar, salt and pepper; shake well. Pour over salad and toss to coat.

Nutritional Analysis: One serving (3/4 cup) equals 192 calories, 7 g fat (1 g saturated fat), 0 cholesterol, 157 mg sodium, 29 g carbohydrate, 2 g fiber, 5 g protein. Diabetic Exchanges: 2 starch, 1 fat.

Very pleasant summery salad with a good blend of flavors. At first I was concerned that the amount of pasta was not going to be enough to balance all the veggies, but I made the recipe as indicated, figuring I could always add more orzo later if needed. It turned out to be just right when made the way the recipe says. I do not like olives so did not include them, and I used a reduced fat Greek vinaigrette with feta instead of the oil & vinegar.

my sister in law is getting married tomorrow and asked me to make something for the rehearsal dinner tonight, so I decided to make this. It is so tasty my 2 year olld daughter and I are having a hard time saving any for tonight! The one thing that I did differently was use mini pasta shells because the store I shop at didn't have any orzo, and I didn't have time to stop some where else. next time I will definitely try it with orzo.

Brought this to Father's Day cook out and what a hit! Everyone was a little confused at the Orzo (they all thought it was seeds!) But got rave reviews. I used what veggies I had, red and yellow peppers, cuccumbers and olives. Didn't want to add cheese since it was a hot day. Great flavor, will definitely be my pasta dish of choice

Absolutely delicious and a nice change of pace from typical pasta salads. I made it exactly as the recipe calls and quantities of each ingredient were just right. Very flavorable. It doubles easily for a large crowd.
