Ingredients

  • 1/2 cup tomato juice
  • 1/2 cup vegetable oil
  • 1/2 cup finely chopped onion
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1/2 teaspoon pepper
  • 1 (3 pound) boneless pork loin roast

Directions

  1. In a large resealable plastic bag or shallow glass container, combine the first 10 ingredients; add pork and turn to coat. Seal bag or cover container; refrigerate overnight, turning meat occasionally. Drain and discard marinade. Grill, covered, over indirect heat, turning occasionally, for 1-1/4 to 1-3/4 hours or until a meat thermometer reads 160 degrees F-170 degrees F. Let stand for 5 minutes before slicing.

I don't have a grill so I baked it in the oven and it turned out decent. Not great though. MORE
