This lasagna recipe was excellent! My boyfriend is a meat eater and even he loved it! I used spinach lasagna noodles in it instead, just for something a little different!

I have probably made this a dozen times and it always turns out. You can substitute pretty much any vegetable. I have used things like carrots, spinach, zucchini, any color of pepper, and different mushroom varieties.

This is delicious!! I just made it today for my brother's birthday and it was fantastic. I didn't add the onions, garlic or bell peppers because I didn't have them, but it still turned out fantastic. I also used fresh basil instead of dried and I used the no boil lasagna noodles. Definitely a keeper. Thanks!

I was really hoping this would be better. It wasn't terrible, but we didn't really like it either. Strange and bland taste. I subbed zucchini for the mushrooms and omitted the Parmesan, but still... My husband says lasagna should have meat in it, anyway, so I think I'll keep looking for another lasagna recipe. Thanks anyway.

This lasagna was fantastic. I added some things -- I mixed sundried tomatoes and spinach in with the ricotta, and also layered in some thin zucchini slices (put in a dry pan beforehand to reduce water), and also layered fresh basil leaves in. AMAZING. Do listen to other reviewers and be careful to use a good sauce, preferably homemade. The dish held together so well, too, hard to find in veggie lasagnas. I made it for 'girls night' and they are still talking about it!

Great recipe. I only altered the instructions in the veggies I used ... substituting a bag of whole spinach leaves for half of the mushrooms, one onion, half a green pepper and half a red pepper. Came out very moist, and held it's structure well. My non-vegetarian boyfriend loved it! Definitely a keeper.

This recipe gets rave reviews everytime I make it. The only thing I do differently is add zucchini, yellow squash and broccoli to the mix so it is a true vegetable lasagna.

Awesome! As mentioned by another reviewer, you really only need half the noodles...but then again, I added more vegies than called for such as carrots, fresh spinach, and lightly steamed chopped aparagus. I did not have fresh mushrooms but canned worked great. To save some calories, I didn't use quite all the cheese listed in the recipe. I also added some crushed fennel--delightful meal with bread sticks and salad!

Absolutely awesome!! I made it a little more vegetable-y...adding mushrooms, spinach, zucchini, and yellow squash. Used one jar garden vegetable pasta sauce, one jar garlic cheese pasta sauce. Turned out perfect! This was my first time making lasagna--was hesitant to make because it's just me here...I ended up sharing with family and friend who LOVED it...eventhough it didn't have meat. Oh--used only one cup mozzarella cheese, one cup marble jack. YUMMM!!

This is a great general guide for veggie lasagna. I agree with previous reviewers that it's better to make your own sauce. I just add crushed tomatoes with basil and a few spices. I use uncooked whole wheat lasagna and add some extra sauce so that it doesn't turn out too dry. Pretty much any combination of veggies works.

I served this to guests and they loved it! I cut the mushrooms down to a 1/2 lb and added sliced carrots with the rest of the vegetables.
