I loved this recipe! I've been looking for a good veggie lasagna for awhile and this one is great! My changes: added some spinach to the ricotta, left out the green pepper and added shredded carrot and zucchini instead. Also, I used low-fat mozzarella and it still tasted great. Thanks for the recipe!

Excellent recipe! Simple and delicious. I used the lasagna noodles that don't have to be pre-boiled to shorten prep time. I also added a can of diced tomatoes. The lasagna was moist and perfect, all of my guests loved it.

its a wonderful recipe ,but i did make some changes to suit my family.I boiled spinach and had one layer of cottage cheese,spinach and 2 eggs.this is how i layered my lasagna:sauce,pasta,veggies, sauce,pasta,spinach,pasta,sauce,shredded cheese.I didnt put any cheese in between the lasagna noodles to cut down some calories.Thanks for a wonderful starting recipe.

PERFECT. I added spinach to the ricotta/egg mixture, and used a six cheese blend instead of just mozzarella. HEAVENLY!

I have tried at least 3 or 4 lasagne recipes and this beats them all hands down. Easy and very delicious. Highly recommend. I didn't have ricotta, so I used cottage cheese instead. I think I actually liked it better that way.

This lasagne is superb. I especially like the fact that it uses tomato sauce instead of white sauce. Must like mushrooms to enjoy this recipe. I used precooked lasagne noodles and it came out great.

Delish! I mixed quantities about a bit (basically threw everything in!) and it was still yum-tastic. Also, instead of green pepper I put in aubergine and carrots to make it a bit more substantial. Will definately be making again...

I love the basic concept of this recipe, but did make a few changes. I used olive oil instead of vegetable oil. Also, I loaded up on additional veggies such as chopped spinach as well as shredded zucchini, yellow squash, and carrots. Instead of making one large tray, I divided into 10 small bread pans for individual portions and froze half of them for later quick meals. L-o-v-e-d this....

This was a very good and basic recipe that you can tweak to your liking. In addition to the peppers and onions, I used portobello mushrooms and spinach. I also added some extra garlic, and used an italian spice mix. Next time I'll probably use more sauce, just for personal taste. Thanks for the recipe!

Absolutely fabulous! I used portobello mushrooms for a chunkier sauce, and whole wheat lasagna noodles. There wasn't enough tomato sauce in the original recipe than I had liked, so I added a bit more and it tasted great! This is something that I will definitely make again. Thanks!

This was very, very good. I did make a few small changes. I used mushrooms, green pepper, zucchini and frozen spinach (thawed and drained). I also added a little Italian seasoning to the veggies while cooking. The flavor was wonderful, the only thing I would do different next time is to chop the veggies into smaller pieces, especially the mushrooms.

This was pretty good except I think duet to all the sauce, it didn't come out too firm. However, after a night in the fridge and a microwave at work, it's better. The taste was overall very good! I added zuchinni and broccoli to the mix (cut down on the mushrooms, pepper and onions). I also forgot the parm. cheese in teh middle so i sprinkled it on the top. All in all 4 stars, and only because it was a little soupy. I'd suggest a little less sauce.

This was a great recipe to start with. I added some spinach and used some really great locally made marinara sauce, so that definitely made a big difference. Unfortunately though, the last time I bought mozzarella at the store, I bought the fat free kind by accident. So when I ran out of the regular kind, halfway through the recipe, I had to use the fat free kind on the top and it was just disgusting. Reduced-fat cheese is fine, but fat free cheese is absolutely horrid. Avoid it at all costs, as it has the potential to ruin this and pretty much any other recipe.

This was absolutely fantastic. I am on weight watchers, so I swamped out a few things. I used wheat lasagna noodles, fat free cheeses and cooking spray, no oil. This tasted delicious!!

Great recipe!!! I reduced the mozz. cheese in half to lighten it up, and I didn't feel like I missed the extra cheese. I will definetly add spinach to it next time I make it.
