"Diana Lauhon of Minerva, Ohio modified a soup recipe to suit her family's tastes while taking advantage of convenience foods. 'Once you brown the sausage, it's a snap to throw in the other ingredients and let them simmer. Frozen tortellini is added minutes before serving for a savory soup that tastes like you spent hours making it.'"

INGREDIENTS
3 uncooked Italian sausage links
1 quart water
2 (14.5 ounce) cans Italian stewed tomatoes
1 (10.5 ounce) can condensed French onion soup, undiluted
2 cups broccoli coleslaw mix
2 cups frozen cut green beans
2 cups frozen cheese tortellini
grated Parmesan cheese

DIRECTIONS
Cut sausage into 3/4-in. pieces; brown in a Dutch oven or soup kettle. Drain. Add water, tomatoes, soup, coleslaw mix and beans; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender. Uncover; add tortellini. Cook for 3-5 minutes or until pasta is tender. Garnish with Parmesan cheese if desired.
FOOTNOTE
Broccoli coleslaw mix may be found in the produce section of most grocery stores.

This soup was GREAT!! I had to 'tweak' the ingredients just a bit due to local availability - but I just made meatballs out of the bulk Italian sausage, used regular coleslaw mix and used dry onion soup in the envelope to lower sodium content. We loved it and hubby (who is a take it or leave it kind of soup guy) requested garlic bread to go with the leftovers tomorrow night!! It's definitely a keeper! And to think that my first attraction to it was the frozen green beans!
