I LIKE to prepare this when I have leftovers of ham and day-old bread on hand. It's a delicious dish for brunch. Besides being so tasty, it's prepared the night before, which allows me more time to complete other dishes for the meal. This dish still tastes good hours after being baked, so it's also a favorite to take along for potluck gatherings. -Elizabeth Hesse, Springville, New York

I created this casserole one day while trying to find a good recipe for leftover ham. Instead of resorting to scalloped potatoes and ham, or ham and noodles. I tried asparagus. Everyone liked it so well, I've made it ever since.--Helen Ostronic, Omaha, Nebraska

Our minister's wife served this and was kind enough to share the recipe, recalls Helen Phillips of Greensburg, Indiana. It's very good. TIP: Feel free to replace the stuffing croutons with crushed stuffing mix.
