INGREDIENTS
1 pound bulk pork sausage
1/2 cup chopped onion
1 1/2 cups shredded Cheddar cheese, divided
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1 (4.5 ounce) jar sliced mushrooms, drained
12 eggs
2 cups heavy cream
1/4 teaspoon ground nutmeg

DIRECTIONS
In a skillet, cook sausage and onion until the sausage is browned and the onion is tender; drain. Remove from the heat; stir in 1 cup cheese, spinach and mushrooms. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. In a bowl beat eggs. Add cream and nutmeg; mix well. Pour over sausage mixture. Bake, uncovered, at 350 degrees F or until a knife inserted near the center comes out clean. Sprinkle with remaining cheese. Let stand 5 minutes before cutting.

Delicious! I made everything according to the recipe directions. I did add some salt and pepper to the spinach, sausage and onion mixture. It was delcious. The recipe does not say how long to cook it. I cooked mine for about 40 minutes- topped with cheese (I used more- about double- a mixture of mozz and sharp cheddar) and I baked for another 5 to melt the cheese. It does not melt if you sprinkle the cheese on after it comes out of the oven and then let it sit. Anway, this was wonerful and I will be making it again and again.

This recipe is awesome. I use milk instead of cream, a cup and a half, and I add 1/2t of nutmeg because it the heart of the flavor. Any cheese you like works. Cook your sausage in about 1t of prepared mustard....TRUST ME! SUPER!

We loved this! Substituted half and half for the cream, swiss for the cheese and fresh mushrooms for canned. Other than that followed the recipe as written. Enjoyed it Christmas morning for breakfast. There were just a few servings left and they reheated well in the microwave. Thanks!

Very good. Followed recipe exactly and the dish came out great. I think that next time, I might try to substitute either ham or bacon for the sausage, as I think they might compliment the flavor of the spinach and mushrooms better.

Excellent! I used whole milk instead cream because that's all I had. Also didn't use mushrooms because I didn't have any. Also only used about half as much spinach - I think the full 10 oz would have been too much for our taste. Also, used bacon instead of sausage and that was really good. Cooked for about 40 minutes. About 4 more minutes to melt the cheese on top. My little kids and husband (and myself) loved it! (sorry for all the changes - but wanted to show what else worked.)

This casserole is yummy! I used mushrooms instead of spinach and milk instead of cream because that was what I had on hand. It's really simple and easy to whip up for breakfast. I also added extra salt, pepper and fresh rosemary, thyme and sage.

This was really tasty! I made it for dinner tonight. I omited the mushrooms, only because of personal family taste. And I used Half and half, fresh spinich and homemade Turkey sausage. Other than that I made it jsut as posted. My family really enjoyed it! I plan to make this a stapple.
