INGREDIENTS
4 cups whole wheat flour
2 cups all-purpose flour
2 cups packed brown sugar
1/2 cup sugar
2 teaspoons baking soda
1 teaspoon salt
3 cups 1% buttermilk
2 eggs, lightly beaten
1 cup raisins
1/2 cup chopped pecans

DIRECTIONS
In a large bowl, combine the flours, sugars, baking soda and salt. Stir in buttermilk and eggs just until moistened. Fold in raisins and nuts.
Pour into two 9-in. x 5-in. x 3-in. loaf pans coated with nonstick cooking spray. Bake at 350 degrees F for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

Excellent bread! It has great texture and moisture and just the right amount of sweetness balanced with whole wheat and nuts. It would probably also be good with the addition of spices such as cinnamon and nutmeg.
