INGREDIENTS
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper, divided
2 pounds lean boneless beef sirloin steak , cut into 1/2-inch cubes
2 tablespoons canola oil
4 cups sliced fresh mushrooms
4 (14.5 ounce) cans reduced-sodium beef broth
4 medium carrots, sliced
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1 cup quick-cooking barley

DIRECTIONS
In a large resealable plastic bag, combine the flour, salt and 1/4 teaspoon pepper. Add beef and shake to coat. In a Dutch oven, brown beef in oil over medium heat. Remove and set aside.
In the same pan, saute mushrooms until tender. Add the broth, carrots, garlic powder, thyme and remaining pepper; bring to a boil. Add barley and beef. Reduce heat; cover and simmer for 20-25 minutes until the meat, vegetables and barley are tender.

This is very similiar to mine except I add chopped onions and celery. I use oregano for the spice. Instead of four cans of broth, I use three and one can of beef consomme' and a little less barley. Whether made by this recipe or making with some of my changes, it is a great soup...My husband's favorite.

This soup was delicious! I added 2 stalks of celery and 1 onion in with the carrots. Also, I only added about 1/4 cup of broth and allowed the vegies to cook for about 10 minutes before adding the rest of the broth. This allows the flavors to come out more. I have been looking for the "perfect" beef barley soup recipe, and I believe I finally found it. Thanks for the recipe, Megan!

This was just ok. I added onions and celery, but followed the rest of the recipe exactly. Came out bland, needed to be beefier or something, I'm not sure. The consistency was great, and it was good enough to eat, but not good enough to make again.
