YUMMY! The perfect side dish for grilling out. My dad even asked for the recipe to give to my mother! Let it chill for a few hours to let the flavors blend.

This was a great potato salad and I am picky with my potato salads! I only gave it 4 stars because I felt I had to make some changes to make it 5 stars. 1-I added a big spoonful of sour cream because it was too mayo tasting. Next time I am going to try replacing 1/4 C of the mayo with the sour cream. 2-I used chives instead of green onions. 3- I added about 1 tsp of red wine vinegar (I think it is better for these kinds of salads than cider vinegar). I omitted the peppers and celery because I didn't have them and didn't add quite as much parsley. I also used about 1/3 of a red onion instead of a sweet onion. It turned out great and everybody loved it. I did use one and a half of the yolks because I don't like wasting food. The kids ate the others:) Thanks Pat for the recipe!

Great! I have been looking for a recipe for potato salad for my husband. I am not a very picky eater and love potato salad but never make it since he doesn't eat it. I made this for a BBQ and everyone was raving, so he tried it and loved it. I now have had a requests for it. I left out what I didn't have at that time, which was the parsley and celery. I did add some 8 slices of bacon crunched into peices and sprinkled over the top. I think it is great that it tastes good and is healthy (even after the bacon). I hope you try this at your next BBQ.

I really didn't think this was anything special. I left out the celery as I always do with recipes because I dont like it. It wasnt bad, but not a 5 star recipe. I felt it needed some salt or something to make it have more flavor

This was really delicious, and an excellent substitute for those high-fat potato salads (although you can never really make potato salad terribly healthy). I, like the previous reviewer can't believe that no one else has reviewed this yet! Its definitely not the traditional southern potato salad i grew up on but it has a fresh, rich taste that really hits that spot. I changed it up a little, using 1 of the yolks along with the five whites, omitted the ground mustard and added about 1 1/2 tablespoon of creole mustard, left out the celery and red pepper (i hate both of those things) and added a little dill relish, just to make it taste more traditional. I really encourage everyone else to give it a try; it's delish!

I'm surprised more viewers are not trying this one! I made this for an afternoon get together with the girls along with a side dish of assorted finger sandwiches. It recieved lots or raves and I think it's good enough to be part of my next Easter family dinner. I used the whole boiled egg, just added the yellow to the mayo and mixed real good, (I hate to waste anything).I will be making this recipe again. Thanks!

Simple, and very tasty! This potato salad got rave reviews at home. Instead of cider vinegar, I substituted red wine vinegar and it was excellent.
