2 (10.75 ounce) cans low-fat, low-sodium condensed cream of mushroom soup
1 large onion, chopped
3 pounds chuck roast
2 cups sliced carrots
1 pound small red potatoes
1/2 pound string beans
1/4 cup chopped parsley
Very good and easy. But why oh why does someone change the recipe leaving out the soup and then give it a low rating.
I make this recipe without mushroom soup at all and it is less fattening. Use beef broth instead of mushroom soup or just water.

This is the best pot roast I have ever had. I did add only 1 can of soup and also 1 can of water to lighten it up. I am thrilled at how easy and fantastic it was!
Followed to a T, was delish, however food for thought, cut the red potatoes, they took the longest to cook. Simple and easy and tasted just wonderful.
Delicious and healthy with the vegetables added. I wanted to comment that Cream of Mushroom Soup is not that fattening in the overall ratio of the recipe ingredients, (do the math) especially if Campbell's Healthy version is used.
great recipe, added some seasoning to my preference minced garlic, pepper and tumeric. Added some whole mushrooms which tasted delicious
made this recipe today and it turned out great! i put everything in the crock pot- potatoes, carrots, celery, onion, green beans, meat and the cream of mushroom soup. let it cook on low for 10 hours and YUM!
