1 1/2 pounds lean ground beef
1 egg
1 onion, chopped
1 cup low-fat (1%) milk
1 cup whole wheat bread crumbs
1/2 cup chopped fresh parsley
1 large carrot, grated
salt and ground black pepper to taste
1 tablespoon brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup
We did not care for this meat loaf.
This recipe was so-so. The meatloaf really did not hold together that well, it was really moist so fell apart easily. I did use ground turkey instead of beef due to food allergies. For my picky eaters I used onion powder instead of chopped onions. It was a bit on the bland side and should have looked at reviews of the original recipe first and seasoned appropriately:/ My kids did like the sauce that was on top.
