This is the best healthy muffin recipe ever! As per other reviewers I changed quite a few things: all whole wheat flour (1 1/2C), 1/2C splenda (12 packets of the fiber enriched one), 1/8C brown sugar, wheat v. oat bran, no wheat germ so used 1/2C oats, used almonds v. walnuts, 1C fresh blueberries with 1/4C craisins, used light vanilla soymilk with 1tsp lemon juice, 1/3C egg beaters v. eggs, added 1/2tsp cinnamon, 1/4tsp nutmeg, 1/3C applesauce and 1/2 a banana no oil, and sprinkled sugar in the raw on top before baking for 19mins (it made 13 muffins). SO healthy and tasty even my picky non health nut husband liked them. I can't wait to try this base with banana nut and apple cinnamon muffins.
