Ingredients

  • 1/2 cup white chocolate chips
  • 2 cups flaked coconut
  • 1/2 cup white sugar
  • 1/3 cup all-purpose flour
  • 2 eggs
  • 1/4 cup finely chopped almonds
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt chocolate in double boiler, in a saucepan over low heat, or in the microwave stirring occasionally until smooth.
  3. In a large bowl, combine coconut, sugar, flour, eggs, almonds and vanilla. Stir well. Fold in melted chocolate. Drop by rounded spoonfuls onto baking sheets.
  4. Bake in preheated oven 25 minutes, until set.
