Rave reviews from husband "explosions of flavor" because each ingredient worked! The only adjustment was adding a scant 1/4 tsp. garlic powder and 10 extra minutes of cooking. Next time I will just cut the bell pepper and onion into smaller pieces for easier forkfuls. Loved it!

Just had this made with leftover ham slices from Thanksgiving and used what I had on hand which was scallions but no green pepper or pineapple but I did have pineapple juice on hand which I used. Left ham in slices rather than cubing it. As per the advice of others I used 3 t. soy sauce, 1/2 or so brown sugar. Did not use raisins. Served with jasmine rice and nice salad. A tasty and satisfying meal. Will definitely use this recipe again.

I made this for a potluck in a crockpot. Wonderful! I prepared and bagged all ingredients at home, then dumped it all together in the crockpot once I got there (I omitted the raisins) and let it cook for 4 hrs on low. Served with rice. It was a hit!

I thought this was pretty good. It's basically a recipe for a baked Chinese sweet and sour dish, except with raisins. Next time I'm leaving out the raisins. They didn't fit in with the rest of the ingredients. Just about any meat could go in this dish. I did as others suggested and used half the brown sugar. Also, I didn't have cider vinegar so I just used regular. It still came out good. It probably could have been a smidge sweeter, but fine to me. I also used two tablespoons of soy sauce.

My family enjoyed this recipe very much. I made a few modifications: I added 3 garlic cloves, minced; subbed in dried cranberries for the raisins; I only put in 4 tbsp. of soy sauce, but then added 2 tbsp of fish sauce;I reduced the apple cider vinegar to 1/4 cup and put in 1/4 cup cooking sherry; and I used broccoli instead of peppers (I want to try the peppers, I just was out when I made this dish). Next time I make it I will reduce the amount of brown sugar. It was a touch too sweet, and with the pineapple juice and fruit, a reduction of sugar would be nice I think. It's a great dish to make ahead of time.

Everyone in the family liked this recipe. The only thing I did different, was to make the sauce stove top while the rice was cooking in the rice cooker. I omited baking it in the oven and just served the sauce over the rice tableside along with crunchy chow mein noodles. I also added red/yellow peppers and mushrooms too! Very Good, simular to one my mom made when I was a kid.....THANKS!
