This recipe is a keeper! I've made it several times now and I learned early on that I need to double it if I want to keep any on hand for me and my hubby. Don't change a thing - it's perfect the way it is! (However, since I do double the recipe, I find it easier to first pre-mix all the wet ingredients (incl the coconut)then I spoon in the dry ingredients and add the walnuts last.) I usually bake in disposable mini-loaf pans so that I can send some home with family and friends. Mini loaves take about 40-45 minutes to bake to a perfect golden brown. This bread tastes even better after a day or two. FYI, I just recently whipped up a batch using 25% less sugar (to see if I could taste much of a difference)it was nearly as good as the original. But as I said in the beginning, do yourself a favor and give this one a try "as is". It's obviously not meant to be a "lite" recipe. I'll close with a "WARNING"...be prepared for family and friends to hound you for this bread for the rest of your days! The up side?? I've learned to barter with it. My friend is coming over to help me set-up my home theater surround sound equipment; his price..."some of my banana bread".
