This recipe is a good start, but had to be adapted to actually work. The recipe calls for way too much potato (I don't think it would even fit in a 2 quart dish). Half of the amount is sufficient. I used only a one 1 lb package of the potatoes with bell peppers and onions, and that was plenty. Using the 1 lb package was perfect for my dish, a 9 x 13 pan. Also, 5 eggs was not nearly enough. I used 9, but that was all I had. 10 would have been better. The milk, onion powder, and garlic amounts seemed fine, but there is also too much cheese on the recipe. 8 ounces was plenty. I can't give an opinion on the amount of sausage because I used ham instead, which was a great decision for my group's appetite. With those changes, my casserole was delish, and a big hit with the family.

I really love this dish. It wasn't dry for me, but I did make a few changes. I used Jimmy Dean sausage (4 patties)since that is what I had, 1 extra cup of cheddar cheese (divided)- my kids love extra cheese - and 1 extra egg. Maybe the cheese gave it extra moistness. Great for leftovers.

I agree that when this recipe is made as written, it is too dry. I prepared the casserole the night before. Next time I will only use half of the amount of potatoes, and will use seven eggs instead of five. Use a well greased or cooking sprayed 12 x 13" pan. Otherwise it is very good.

I made this exactly as the recipe was written. My family all liked it well enough. I thought it was terribly dry. I think if I make it again, I'll add more eggs and more milk. Possibly less potatoes as well.

This was okay. I liked it But my family was fond of it at all. I added salsa and sour cream to garnish and that for me helped that flavors. I thought without it, it was bland.

What a wonderful dish!! I made this for dinner instead of breakfast, it turned out delicious, but I did make a few changes. First, I used a 9x13 glass dish, and used 1 1/2 lbs. hash browns that had diced pepper & onion in them, which added wonderful flavor, I highly recommend doing this. Second, I used 10 eggs instead of 5, which was perfect and doubled the milk. This was perfectly baked at one hour also. I used 8 ounces of Morningstar Farms vegetarian breakfast sausage sliced, and meat eaters could barely tell the difference! I will use this recipe often, and definitely make it again using regular sausage. Another tip, the last 3-4 minutes of baking, remove the foil and turn the broiler on, this really made the cheese nice. Thank you for sharing this recipe, I love it!

My whole family really loved this dish. I made it on the spur of the moment, and changed a few things to use what I had on hand. First, after reading the reviews here I decided to use a 9X13 inch baking dish. It turned out to be the perfect size. Since I only had 4 eggs, I just used those. I added about 4 ounces of ricotta cheese to the eggs as well, and used a bit less milk than the recipe called for. Also, I didn't have any sausage but did have a lot of leftover ham as well as a few slices of cooked bacon. I sauteed the onions first, added some minced garlic, and finally tossed in the chopped ham and crumbled bacon to heat it through. I then assembled the casserole as directed. I only baked it for about 50 minutes total, and it was perfect. A dollop of sour cream on top of each serving, and we loved it! The leftovers heated up nicely for lunch the next day.

I loved the idea of using hash browns, but the quantity was too much. I'd leave out at least one cup of the potatoes. Next time I may fry the potatoes in a little oil with salt/pepper for better flavor and texture. Add a few more eggs and milk for more yummy filling. The cheese and sausage was delicious. Basically a good recipe that I'd like to tweak for our tastes. Thank you!

I made this for Easter brunch. It was a big hit! I made everything the night before and popped it in the oven after church. I followed the recipe completely, except that I didn't use 2 pounds of hash browns. They wouldn't fit in the 8x8 glass pan I was using. I probably used 3/4 of the 2 pound bag.

Will definitely be making again. Halved the recipe, all fit in 8x8 pan perfectly, added add. sausage and used less cheese. Purchased hashbrowns that had green peppers and onions in it. Thinking about adding feta cheese the next time to add a little extra creaminess to texture.
