This is great one dish breakfast and a good way to use up leftover ham. I don't usually add in green peppers, but instead stir about a 1/4 cup of salsa into the egg mixture. My family loves waking up to this!

Delish! I often find quiche with usual pie crust quite heavy, so the hash browns were a great change! My boyfriend (28), and 2yo both gobbled it up like they hadn't eaten in days. My bf did pick out the green peppers tho, but that's an easy fix. This recipe can be a great base: add/subtract any omlette type fixings you have. I did leave out most of the butter & salt, just not necessary. This will become a regular at our house for sure!

Not my favorite. The eggs soaked into the hash browns making it dry. I am only giving it a 2 stars for the mushroom, and pepper flavor. Those are always good together.

I've made this several times now for friends and family and it is always a hit. It is pretty easy to swap out vegetables and mushrooms if you don't like a particular item and still maintain the flavor of the quiche. The potatoes can also be spiced more heavily to make for a very zesty crust. I always seem to end up with a way larger quiche than a 9-inch plate can hold though! An easy five stars for being relatively easy to assemble and delicious

WOW !!! I made this quiche for brunch and everybody loved it .The only change I made was , red and yellow pepper instead of the green,added shredded mozzarella and provolone to the chadder since i had them and some parmesan too; I had some left over honey glazed smoked ham so I used those as well. The outcome was delicious.

It is hard to mess up potatoes and eggs. That being said, I find it pretty easy to make them even yummier. This recipe's saving grace was the cheese and hash browns. Other than that it was VERY bland. It definitely needed about a cup more hash browns to cover the top of the sides of the pan. It needed something like ortega chill's or tomatoes to make it extra special. It was ok. I probably won't make it again.

Delicious! Different than your regular quiche but really good. We made breakfast for dinner and this was a hit. The only change I made was I left the mushrooms out due to personal preference. I will be making this again!

This was easy and tasted great! There wasn't quite enough hash browns to form a crust up the side though, might add a whole extra cup because they cook down so much!
