I'm all for easy. I add 1/2 a packet of onion soup mix. Don't have to bother with the onion prep this way and the onion soup mix gives the potatoes a nice zippy taste. Everybody always asks what's in my potatoes. They know there's something extra, but can never figure it out. If you use the soup mix don't add any salt, it is not needed. Also I never use butter, the cheese adds enough oil. Plus I use fat free sour cream and heathy request cream of mushroom soup. I don't usually add any topping, but if I do fried onions are the preferred topping in my house.

This recipe was very good! The only thing that I changed was instead of using cornflakes I used French's Onions on top and added them the last 15 minutes. My husband says this is a keeper!

I love this recipe and make it often. I only used 1/4 of butter, which was fine and I skipped the corn flake topping (only because I never have corn flakes around). I've had it with and without the corn flakes and both are very good. Seems to need a little more cooking than 45 minutes - maybe an extra 10-15 minutes.

Amazingly versatile & easy! I added green onion & chopped ham to make it an entree. The recipe is easy to double or half. You can't go wrong with this! I did use colby jack cheese because I agree that cheddar can be greasier sometimes. This is excellent & is now a staple!

So delicious! Baked for 60 minutes. Did not saute cornflakes. Spread 2 1/2 cups cornflakes over potatoes and would suggest not drizzling any butter over them before placing in oven. Otherwise, it is just too buttery.

My favorite hash brown casserole recipe. Made it last night and switched the cream of chicken soup with cream of mushroom and it turned out great. Exactly the right mix of ingrediants so it turns out not too dry and not swimming in sauce. Thanks!

Awesome recipe - makes enough for two nights for this large family. I didn't have a 3 quart casserole dish so I used a 9x13 pan. You can halve the recipe and make it in an 8x8 square pan if you need to. I also didn't have cornflakes, so I toasted two cups of panko bread crumbs in 1/4 cup of butter for the topping. I also added some smoked paprika and garlic salt to the potato mixture. DELICIOUS! Will definitely make again.

I'm gonna say 4 stars, though my fiancee would have given it 10! I really didn't love the flavor of the cream of chicken soup, maybe cream of mushroom would have tasted better to me. I didn't have cornflakes, so I planned to use french fried onions. I then discovered I was out of those too, so I crushed up Cheez-Its and put them on the top. Pretty good substitute!

this is one of my favorite side dish recipes! it is always a big hit with friends and family. On taco night, i alter the recipe by adding a can of rotel tomatoes and use breadcrumbs in lieu of the corn flake topping. Be sure to add a little melted butter to the breadcrumbs, mix and spread over the casserole. Awesome dish!!

Started by downsizeing to 4 servings. Then used O'Brian Potatoes and Cream of Potatoe Soup, and instead of raw onion, used 3 teaspoons of dried onions. For the topping I used crushed Ritz Crackers sauteed in the butter. It all came out great and the wife loved it with our dinner of meatloaf slices topped with the Provincial Tomatoes (from this site) and the Creamy Pea Salad (also from this site). This is also a definite keeper

Very good, but next time I will omit the onions (too crunchy and dominated the taste of the casserole) and add another cup of cheese. I did add a package of diced ham, and this delicious addition helped make it an entree rather than a side.

You will definetely feel a little more comfortable after eating this casserole. I used cream of mushroom soup instead. All the picky meat and potato guys in my family loved this.

This was spectacular! Another girl at work was known for her hashbrown casserole and this one put hers to shame. I served it with roasted chicken and green beans and everyone said it was amazing :) Our picky 4 year old loved it too!
