I have made this recipe a couple of times for family for breakfast, and everyone always loves it and asks for the recipe. Very easy to throw together and pop in the oven. Also great as a side dish for dinner too!

The very definition of comfort food! Every once in a while it's OK to eat food that's good for your soul - even though it may not be good for your arteries. This is THAT food! My sister-in-law makes these for holidays and they are always a hit with their family - now I have the recipe and made if for my family and they just raved! I added more cornflakes and butter to the top, but that's my preference, I like crispy!

I made this almost exactly as is, except I put it in the crockpot on low for 4 hours and used half cheddar & half sharp cheddar cheese. I also left off the corn flake mixture. My father-in-law said these were the best potatoes he's ever had!

I used two packages of Trader Joe's Roasted Potatoes with Roasted Peppers & Onions instead of frozen hash brown potatoes, Campbell's Condensed Cream of Mushroom soup(Reduced Fat) instead of condensed cream of chicken soup, fat-free sour cream and one cup of Sargento's reduced-fat shredded Mexican four cheese instead of two cups of cheddar cheese. I sauteed two cups of Total cereal in cooking spray instead of butter. The casserole came out lighter and in my opinion, more consciously satisfying than the original version.

AWESOME! I made a double batch for a Cub Scout pot luck dinner and brought barely one serving back home! People and Scouts were coming back for seconds, thirds AND fourths! This a one fantastic recipe!! I put french fried onions on top instead of the cornflakes though.

My mom has been making a version of this recipe for years! I didn't use chopped onions, instead I got the hash browns with peppers and onions added already. That was the only change I made.

This is so yummy! As a variation, I have even used fresh potatoes, since that's all I had in the house at the time. I crisped up the chopped potatoes in a frying pan, seasoning with cayenne, garlic powder, and onion powder. I added the onions to the frying pan at the end to soften them a little. Then I mixed all the ingredients and baked. I omitted the salt and reduced the butter. I also used french fried onions (no butter) as others suggested. This recipe is good anyway you make it, in my opinion.

I really liked this for a brunch dish. Save a little time and dirty pan by just tossing the cornflakes with melted butter in a ziploc bag. The second time I made it I halved the recipe, but used most of the can of soup anyway. Also added some bell pepper and a thin layer of extra cheese under the cereal.
