2 cups chicken stock
1/2 cup brown rice
1/2 cup wild rice
3 tablespoons butter
3 onions, sliced into 1/2-inch wedges
1 tablespoon brown sugar
1 cup dried cranberries
2/3 cup fresh sliced mushrooms
1/2 cup slivered almonds, toasted
1/2 teaspoon orange zest
salt to taste
ground black pepper to taste

DIRECTIONS
Combine rice and broth in saucepan and bring to boil. Reduce heat to low; cover and simmer 35-45 minutes, until rice is tender and broth is absorbed.
In medium skillet, melt butter over medium-high heat. Add onions and sugar. Saute until butter is absorbed and onions are translucent and soft. Lower heat and cook onions for another 20 minutes, until they are caramelized. Stir in cranberries and mushrooms. Cover skillet and cook for 10 minutes or until berries start to swell. Stir in nuts and orange zest, then fold this mixture into the cooked rice. Add salt and pepper to taste.

I really like this dish. It has a very hearty and rich flavor. I thought that six onions might be too much, so I used five. Still very good.

Fantastic! I did, however, cook the wild rice separate (just in boiling water) because the directions on the box indicated a longer cooking time than the brown rice. I doubled the recipe and froze portions for future dinners. However, neither my husband or my 20-month old cared for it as much.

This is such a good rice dish! I made it for company and they just raved over it, and my hubby liked it so much he asked if I would make it for Thanksgiving. We just finished dinner, and I have to say, it got tons and tons of compliments! It's a keeper and a new favorite in our house! thanks for the great recipe Kathy!

This was the BEST rice dish I ever served!! I thought the cranberries would be too much, but my guests LOVED it, and it was the cranberries that made the dish special. I had to 4x the recipe to serve about 10 people. This is my new pot luck dish for parties!

I had to improvise w/ what I had on hand--namely, fresh cranberries. Big mistake. These MUST mean SWEETENED dried cranberries. Egad--very tart. Other than that, very tasty!

This is delicious. It's nice to have something a little different from plain rice. I used what I had on hand - white rice instead of brown and chicken rice soup for one cup of the chicken broth and it was wonderful.

This was surprisingly nice. I only used one large mayan onion though as opposed to three onions, and the dish still seemed about half onion. Three would have made it an onion dish garnished with rice. Also, I didn't want to buy a huge, expensive bottle of orange zest, so I substituted a tablespoon of orange juice concentrate for the zest.
