INGREDIENTS
1 pound ground beef
3 cups water
2 medium carrots, cut into 1/4 inch thick slices
1 celery rib, chopped
1 envelope onion soup mix
2 cups uncooked instant rice

DIRECTIONS
In a large skillet, cook beef over medium heat until no longer pink; drain. stir in the water, carrots, celery and soup mix. Bring to a boil. Reduce heat; cover and simmer for 8 minutes or until vegetables are tender.
Return to a boil; add the rice. Remove from the heat; let stand for 5 minutes or until rice is tender.

I've made this recipe twice now. The first time it was good, but was a little too bland for me. I made a note to add some Tony's creole seasoning the next time I made it, and it really made a big difference. I like to have a collection of recipes I can make on the stovetop and avoid turning on the oven (and heating up the entire house!). It was very easy to prepare which is another big plus!
