Ham 'n' Cheese Mashed Potatoes
SUBMITTED BY:
Debra Herlihy
"The way I dress up leftover ham and mashed potatoes is a surefire success in my house! Cheddar cheese and cream add richness to this casserole while garlic seasons it nicely. It's something my family looks forward to having on a regular basis."

Good. I used instant potatoes & also added spices to taste. I happened to have some whipping cream on hand so I followed the directions, but it seemed to "melt" after baking. Not a big deal, just a bit soupy of a top layer--maybe think of it as keeping your potatoes moist. I did add crushed cornflakes to the top and would be even a bit more generous with it next time; it counteracted the creamy texture nicely. Easy & tasty.

Substituted garlic powder for garlic salt, did not have whipping cream and used 1/4 cup skim mile and 1/4 cream cheese. Also sprinkled seasoned breadcrumbs on top for extra crunch and texture. It was very good and will be made again!

I first made this recipe quite some time ago and it has become a favorite. I don't measure my spices usually and I do add a little salt and pepper to the potatoes. Very good.

This one is a keeper. Only change I made was sprinkling some Parmesan on the top to give it a nice crispy tasty topping.
