Delicious! So flavorful and the only extra "spice" I added was some minced garlic when I sauted the veggies. Subbed grated Parmesan for the Mozzarella since that was what I had on hand. Didn't let it sit all night, just layered the cooked veggies and ham, then cheese, and topped with the egg mixture. Got excellent reviews at brunch.

Quick and easy and tasty, but might add a little crushed red pepper next time for an extra kick. Liked another post of keeping cooked bacon ready. Will definitely make again and thanks for a recipe that can be done at last minute for unexpected company.

Wonderful! I followed the recipe just as written, and it came out great. I served it on Christmas morning and my in-laws really enjoyed it. No hot sauce necessary! However, I did have to bake it for an additional 5-10 mins. Will definitely make it again!

Great make ahead; will use it for Christmas morning. I didn't have a whole red pepper but I added broccoli and left it in the oven for 50 minutes. Was still good the second morning heated up in microwave for a quick breakfast.

I have made this several times. I back off the cheese a little. I saute the onions in a sprayed pan and mix the sliced mushrooms with 1 TBSP soy sauce then saute them too. I don't usually include the pepper. Instead of layering, I mix it all up & reserve a little cheese for the top. Quick and easy to prepare, store overnight & bake in the morning.

I brought this to a shower brunch and all the ladies loved it. A couple asked for the recipe as well. It's easy and I love that it doesn't require any bread. PS - I would add 2 extra eggs, it was pretty thin, but overall very tasty!!

This recipe is GREAT - I've made it several times and have never had a complaint. I've made it exactly as instructed on most occasions but, there were times I did not have everything on hand - I've substituted canned mushrooms for fresh ones - added them when I added the ham; diced onions in place of scallions; and green peppers in place of red peppers - it always came out delicious. This recipe is very versatile. I always used 8 large eggs and it never came out too thin for my 9x13 dish - just might take 5-15 minutes long or that may just be my oven. Thanks for the great recipe.

I love how you can make this the night before. My family loves this for breakfast. I omitted the mushrooms and added in olives. Served it with some sour cream and salsa....great!
