INGREDIENTS
1 1/2 cups shredded Cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 pound fresh mushrooms, sliced
6 green onions, sliced
1 medium sweet red pepper, chopped
2 tablespoons butter or margarine
1 3/4 cups cubed fully cooked ham
1/4 cup all-purpose flour
8 eggs
1 3/4 cups milk
salt and pepper to taste

DIRECTIONS
Combine the cheeses; sprinkle into a greased 13-in. x 9-in. x 2-in. baking dish. In a large skillet, saute the mushrooms, onions and res pepper in butter; stir in ham. Spoon over the cheese. In a bowl, combine the flour, eggs, milk, salt and pepper. Pour over ham mixture; cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350 degrees F for 35-45 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before serving.

Delicious! Served at a women's group and everyone wanted the recipe. I had no cheddar cheese so used all low fat mozarella and it was great. So many baked egg casseroles use bread as a filler, but this doesn't. On my diabetic diet I can eat it without worrying about extra bread.

Loved it! Used a cooking onion I had on hand rather than green onion, but it was a great dish! Will use this recipe again!

We thought this was delicious. We are trying out recipes for my son's baptism brunch and we will definitely be using this one. I made it as written, other than cutting the recipe in half.

This is a really good breakfast casserole! Very easy. I used deli ham and green pepper since this is what I had on hand. I cut the recipe in half and used an 8x8 pan and it worked great! Will make again when we have overnight guests!

switched out the ham for breakfast sausage and it was good. I did not add enough salt and pepper...seemeed to miss something though, sort of bland to me but people seemed to like it.
