This is fantastic, there is a lot of flavor in this salad! I think it would works well on the South Beach diet too! p.s. 20 minutes was too long to cook the sweet potatoes. Also, you could use canned pineapple instead of a whole one. It was very difficult to cut the fruit out.

Killer salad!! Nice blend of ingredients. I added 4 chopped green onions for a little kick (might use more next time to offset the sweetness even more). Used leftover spiral sliced ham which gave it a nice smokiness. My husband thought it was a little "different," so I can't give it 5 stars.
