INGREDIENTS
1 cup chopped onion
2 tablespoons butter or margarine
2 cups cubed fully cooked ham
2 cups diced cooked chicken
1 medium green pepper, chopped
1/2 cup chopped sweet red pepper
1 cup whole pimento-stuffed green olives
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1 cup sour cream
1 1/2 teaspoons salt
1/4 teaspoon pepper
8 ounces noodles, cooked and drained
3 tablespoons shredded Parmesan cheese

DIRECTIONS
In a skillet, saute onion in butter until tender. In a large bowl, combine the ham, chicken, peppers, olives, soup, sour cream, salt, pepper and onion. Fold in noodles.
Pour into a greased 2-1/2-qt. baking dish. Sprinkle with the Parmesan cheese. Bake, uncovered, at 325 degrees F for 45 minutes or until bubbly.

We really liked this recipe. The green olives were a taste suprise, especially for my husband, who was not expecting them. At first, I think he was wary that it would taste good, but by the end he thought it was really good. I did modify it a smidge. I used 1 red pepper, and 1 carton of baby bellas, and left out the green pepper, since I only cook with red peppers. We will make again.

This was good. I did not put the olives in. I thought it needed a bit more onions and maybe a dash of celery seed. I also took some Chicken 'N Biscuit Crackers and crushed them and sprinkled them on top. Took it to a potluck dinner and it disappeared!

I made this recipe for taking along to a Halloween Potluck party and received numerous compliments! Ages ranged from the very young (3) to teenagers to older (70's) and this recipe got a huge thumbs up from all. Made only 2 slight changes to the recipe; for the green bell peppers, I used Red/Yellow/ and some green bell peppers. Instead of 8 oz. of noodles I used 12 oz. (Bow Tie shape)

Simple but yet very tasty. Very easy to make. Be aware that it's very filling so definitively a stand-alone main dish!
