This was great - a good addition to lunches! To flavor up this recipe a bit, I sauteed some onions and garlic and added that to the ham mixture. Also, I added more ham and cheese and about a teaspoon of oregano. This gave it a really nice flavor. Also, just before taking it out of the oven, I sprinkled some cheese on top...very yummy!!

I've made these a few times now and they are great! I recommend buying the self-rising flour, it's just easier although I have made them using the "substitute" flour as well. Use either extra old or old Cheddar for more flavour.

The recipe sounded yummy. But there was something not quite right with the proportion of the recommended substitute for self-raising flour, and my biscuit muffins ended up tasting of baking soda. The cheese oozed out of the batter as well during baking and got burnt, though not a fault of the recipe I'm sure. I will try to tweak the recipe sometime in the future and hope it turns out more right...

Darn! I really wanted to like these, but even though I added eggs and doubled the ham and cheese, they were dry and not very cheesy. Sorry. I might try again with a ton more cheese.
