Ham 'N' Cheese Quiche

"'When I was expecting our daughter, I made and froze these cheesy quiches as well as several other dishes,' writes Christena Palmer of Green River, Wyoming. 'After her birth, it was nice to have dinner in the freezer when my husband and I were too tired to cook.'"

INGREDIENTS

  • 2 (9 inch) pastry shells
  • 2 cups diced fully cooked ham
  • 2 cups shredded sharp Cheddar cheese
  • 2 teaspoons dried minced onion
  • 4 eggs
  • 2 cups half-and-half cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

DIRECTIONS

  1. Line unpricked pastry shells with a double thickness of heavy-duty foil. Bake at 400 degrees F for 5 minutes. Remove foil; bake 5 minutes longer.
  2. Divide ham, cheese and onion between the shells. In a bowl, whisk eggs, cream, salt and pepper. Pour into shells. Cover and freeze for up to 3 months. Or cover edges with foil and bake at 400 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before cutting.

Great receipe! I did some adjusting. I used 1 cup of half and half and 1 cup of 1% milk, 1 cup of 2% cheddar and 1 cup of mozzerella, and no onion. I also sprinkled a little extra cheddar cheese on top before I put it into the oven. There! Perfect! 1 pie for the family and 1 for the couple two doors down (she had knee surgery last Thursday!) Easy, quick, great comfort food! Thank you for the receipe!!!

I love this recipe and they really freeze well. I recently changed it around a little to make it a little healthier. I used egg beaters that are ham and cheese flavored in place of the eggs and I used skim milk in place of the half and half, was very tasty.

My husband requested quiche for dinner, so I went in search of a recipe. I found this one, and it's a keeper! I added more onion, basil, garlic powder and crushed red pepper. I baked in a quiche dish, and used Crisco's double crust recipe. Thanks for sharing! I made this again, and changed it up a bit. I added sauteed green & red bell pepper, along with onion and garlic. I also added fresh roasted green chiles. This was over the top. My kids even loved it...and that's saying alot! I'm looking forward to making this again.
