4 cups frozen O'Brien hash brown potatoes
2 cups cubed fully cooked ham
1/2 teaspoon salt
3 tablespoons vegetable oil
2 cups fresh broccoli florets

DIRECTIONS
In a bowl, combine potatoes, ham and salt. In a large nonstick skillet, heat oil over medium-high heat. Add potato mixture and flatten with a spatula. Cover and cook for 2 minutes. Sprinkle with broccoli. Cover and cook 6-8 minutes longer or until potatoes are tender and lightly browned, stirring occasionally. Serve immediately.

Awesome recipe! Easy, cheap, and tasty. The only change I'd make next time is to omit the salt. It really doesn't need any. I also added some pepper and cheddar cheese. Thanks for the recipe!

My kids ate this after a little convincing. They liked it once they tried it. I added some sour cream and cheese while cooking, and used margarine instead of vegetable oil. Really hearty meal, perfect for Christmas ham leftovers.
