Mushroom Crusted Ham and Cheese Pie

The crust is actually herbed mushrooms! It's also filled with a great tasting herbed ham and cheese custard. I created this recipe when I found myself with an abundance of mushrooms and leftover ham in the fridge and an urge to cook something different for lunch! It turned out to be a savory sensation.

I've been making this pie for a few years now. I like to vary the vegetables and meat depending on what I have on hand. I've made it with leftover turkey, sausage and lamb roast. In summer, it's a perfect brunch meal with a salad; in winter, add a loaf of homemade bread for a great dinner.

This popover pie using curry and ham is perfect for breakfast, lunch, or supper. So quick and easy to prepare. It's attractive and tastes good, too. Top each serving with a dollop of yogurt and chutney.

Sweetened apples, mustard, barbeque sauce and honey make a delightful ham glaze. This ham recipe is an old favorite in my husband's family. The sauce it is cooked in is delicious served with the ham as well.
