Ground Chicken Gumbo

INGREDIENTS

  • 1 cup uncooked long grain rice
  • 1 pound ground chicken
  • 1 cup chopped celery
  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 2 tablespoons olive oil
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup sliced fresh okra
  • 1 cup chicken broth
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground thyme
  • 1/4 teaspoon hot pepper sauce

DIRECTIONS

  1. Cook rice according to package directions. Meanwhile, in a Dutch oven, cook the chicken, celery, green pepper and onion in oil over medium heat for 8 minutes or until chicken is no longer pink; drain.
  2. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until heated through. Serve over rice.

Nutritional Analysis: 1 cup gumbo with 1/2 cup rice equals 322 calories, 11 g fat (2 g saturated fat), 50 mg cholesterol, 900 mg sodium, 40 g carbohydrate, 5 g fiber, 18 g protein.

Very easy and tastes amazing. I would add a little more chicken broth , mine was a little dry. I usually cook things from a box,fast and easy. This recipe is just that!

Not a great hit, I'm afraid. Probably more to do with our tastebuds than the recipe itself, but we found it terribly bland - and that's even after I added chorizo to try and spice it up somewhat.

THIS WAS PRETTY GOOD! I HAD NEVER MADE GUMBO BEFORE. I USED CHICKEN TENDERLOINS INSTEAD OF GROUND CHICKEN AND FROZEN SLICED OKRA INSTEAD OF FRESH. WILL MAKE AGAIN!
