Ground Beef Zucchini Skillet

1 pound ground beef
1 tablespoon dried minced onion
1 teaspoon minced garlic
1 (15.25 ounce) can whole kernel corn, drained
1 (14.5 ounce) can diced tomatoes, undrained
1 medium zucchini, halved and sliced
1 (4.5 ounce) jar sliced mushrooms, drained
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese

DIRECTIONS
In a skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the corn, tomatoes, zucchini, mushrooms, basil, oregano, salt and pepper. Cover and simmer for 10-15 minutes or until heated through and zucchini is tender. Sprinkle with Parmesan cheese.

Well this recipe has potential but to me it was more like a pasta sauce than a meal in itself. I ended up adding more spices and felt it could've used a thicker tomato base. That said, I liked the addition of the zucchini and it did taste nice on the pasta that I ended up cooking to go along with it. Good start.

This was tasty and super easy to make. I used garlic powder instead of fresh garlic to save time and it was great. Even when I cook with fresh garlic I usually add some garlic powder because it gives a different flavor and enhances most recipes. I think next time I will top this meal off with shredded mozzarella while it's still piping hot. I used grated parmesan as suggested which was fine too. I used a bit more zucchini as well as yellow squash because I love veggies. I think this entire meal took 20 minutes to make from start to finish plus it's very healthy. I used lean ground beef and drained off the fat. I will be making this again. I would give this 4 1/2 stars if I could.

My husband and I loved this recipe! It is a great way to use up fresh veggies in your fridge that are on the verge of going bad. My family raises Black Angus and I am always on the look out for a new way to cook ground beef. I agree with the other reviewers about adding more spices to the mix to boost the flavor. I recommend 1/2 tsp of Cumin to give it a savory, smokey flavor. Also, instead of using canned corn, I used 2 cups of frozen corn to cut down on the sodium in the dish. Also, I used 1/2 a fresh onion and 2 cloves of garlic, chopped.

This was good but definitely lacking something. I made it with angel hair pasta and it tasted ok but I just cant put my finger on whats missing from it. The kids didnt eat much of it so I probably wont make this one too often.

Budget-friendly and quick. I added a can of tomato paste and went a little heavier on the spices. That gave it more of a sauce consistency for covering pasta. Thanks!

A little bland for my taste, so I added some of my own seasonings. I also added some shredded mozzarella right at the end of cooking and served it over rice. Easy, filling, and quick!

I thought this recipe was very tasty, and if you are looking for something delicious with low sodium, this is the one to check out. It uses a small amount of salt, and other spices to bring out the flavor. You can go one step further and use lean ground beef and low-sodium or no-salt canned ingredients (i.e., the corn, tomatoes, and mushrooms). Very Italian-tasting and very healthy. Followed the suggestion to round it out with garlic bread, made a great meal.

This is one of those great recipes for modifying to suit your tastes and what you have on hand. I used half a chopped onion, a can of diced tomatoes, 8 oz of tomato sauce, a huge zucchini, lots of garlic and frozen corn. I had to omit the mushrooms since I didn't have any (bummer). I stirred in some minute rice, and topped it with cheddar cheese. It was quick, simple, and reheated well the next day for lunch.
