Roast is given a spice rub and cooked with a pan under the grill to catch the drippings. These can be combined with packaged au jus mix for great French dip sandwiches.

Tri-tip is a California central coast specialty, claimed to have been first introduced in the Santa Maria area. This recipe adds dill, sage, and rosemary to the basic Santa Maria recipe. Tri tip is a flavorful cut of meat that really shines when it is slow grill-roasted or smoked. Great with a green salad or layered onto French bread for a juicy beef sandwich.

This is a great way to spice up an ordinary hamburger. Not only can this be done on the grill, but pan fried if desired. Too good not to try!!

I don't like fish with dark meat, but I loved this recipe. My fishing guide gave it to me. Hope you like it. Kingfish is also known as King Mackerel.

This is a grilled salmon recipe that is used at the Saint Matthew Parish picnic every year in Seattle, Washington. It works well with any cut of salmon for grilling, however we typically use salmon fillets. Use wild sockeye or king salmon.

My boyfriend flipped over these. They are easy enough that you can add or skimp on ingredients and they are virtually fool proof. Add more sweet or spicy ingredients at your leisure. This is a surefire hit!

Marinated cubes of steak or roast are grilled over an open flame or kabob style. This recipe has a slightly sweet flavor that is not overpowering, but enough for people to know it's not an ordinary steak!
