INGREDIENTS
1/3 cup water
1/4 cup sherry, or chicken broth
1/4 cup reduced-sodium soy sauce
2 garlic cloves, minced
1/2 teaspoon ground ginger
2 (6 ounce) skinless, boneless chicken breast halves

DIRECTIONS
In a small saucepan, combine the first five ingredients. Bring to a boil over medium heat; cook for 1 minute. Cool for 10 minutes. Pour into a resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 2 hours.
Drain and discard marinade. Grill chicken, covered, over medium heat for 7-8 minutes on each side or until juices run clear.

Nutrition Facts: 1 chicken breast half equals 196 calories, 4 g fat (1 g saturated fat), 94 mg cholesterol, 385 mg sodium, 1 g carbohydrate, trace fiber, 35 g protein. Diabetic Exchanges: 5 very lean meat, 1/2 fat.

This is definitely a tasty marinade! However don't subsitute by using regular soy sauce - it's all we had and it ended up being a little too salty.

I just added a little sugar and it was absolutely yum-o! If time allows, marinating overnight would probably work better for me (just did for 2-3 hours). Thanks for the recipe, it's now one of our dinner faves!

This was lovley. I was going to marinate it overnight, but we ended up going for dinner the next night so I put the whole lot in the freezer. When i did end up cooking it was delightful with salad. I didn't have low-salt soy, so I used a smaller amount of plain soy and it tunred out great.

i had some chicken breast that i wanted to get rid of in our fridge and this was the perfect recipe for it! all of these ingredients most people already have handy...and the chicken turned out GREAT! it was so delicious i wish i could make more but now im OUT of chicken breast lol =] thanks for this recipe!

I used dark meat chicken, i.e. thighs and it was succulent. White meat chicken gets kind of dry if you grill it.

must have done something wrong as this did not turn out to be much of a marinade. Perhaps I was suppose to boil off all of the water???...or most of it??? didn't say to, so I didn't! Marinade was very watery tho, and not much flavor even after letting the chicken sit over night! What flavor there was there was just OK... but again, was very watery and really didn't soak into the chicken much at all... just mainly tasted like... hum... chicken!
