Italian sausage, split open
I tried this recipe because the combination of shrimp and sausages looked interesting. However, the cooking times for each ingredient are totally different. I’m not sure if there is a error in this recipe that you should be using precooked sausages. In any case, I used precooked sausages and then gave them a head start on the grill before adding it to the shrimp. I cooked the skewers a few minutes per side until the shrimp was cooked and turned pink. I think grilling shrimp for 15 minutes would result in a tough and rubbery shrimp. Please note that I removed the shell from the shrimp for marinating. It just didn’t make sense to me to marinate the shrimp with the shells on. What can I say? We all have our idiosyncrasies.
Think, how can you grill shrimp for 10 - 15 minutes, seems way to long?
1 lb. 16/20 count shrimp shell and tail on
2/3 Cup extra virgin olive oil
3 large cloves chopped garlic
1 lemon sliced
1/8 cup chopped italian parsley
1/4 tsp. crushed red pepper flakes
1 Pkg of your favorite italian sausages split open
1.Rinse shrimp-with a paring knife cut through back of shell to remove vein while keeping the rest of shell and tail intact. *Grilling with the shell on keeps the shrimp more succulent.
2.When shrimp are clean transfer to a bowl and dress with marinade ingredients. Let sit on counter while grill is heating up.
3.Split sausages 3/4 of the way through to speed cooking time.
4.Grill shrimps and sausages over hot coals until cooked through.

Are you saying that the sausage & the shrimp cook in the same amount of time?
How do the sausages appear when served?
