We eat a ton of Salmon throughout the winter season and I always use this marinade. I do substitute a few of the spices and omit the salt based on personal preference but I must also say the original spices are yummy as is. If interested, my alterations are as follows: 1-1/2 lb. of salmon skin removed, Old Bay Seasoning to taste, dash or two of Cumin, Garlic Powder to taste, 1/3 cup Soy Sauce, 1/3 cup Brown Sugar, 1/3 cup Water, 1/4 cup Extra Virgin Olive Oil. I make two separate batches of the marinade; one for marinating the fish and the other for basting the fish as I cook it on the grill. Fish Tip: If you have picky eaters who don’t care for strong flavored fish I suggest the following: Soak the fish in Milk for one hour in a zip-lock bag, drain off milk, rinse and marinate as specified.
