Man-o-Man was this ever good! I did this a little differently but left the essence of the authors flavors (Lime, Garlic, Ginger and Mint) intact. I decided to stir fry the shrimp in a little oil, garlic, ginger and fresh mint. When they turned pink I took them out then stir fried some veggies. (Mushrooms, Summer Squash, Asparagus, Boy Choy and Onions)I Returned the shrimp to the wok and when everything was hot I served this over rice noodles ladeling the sauce over it (I did the sauce exactly per the author except I added a few tablespoons of coconut milk) then sprinkled it with the chopped peanuts. I used 4 Thai chili's and found the heat to be just right. Finally I squeezed fresh lime juice over this and it was absolutely incredible!
