"This frittata is a good dish to make at home because, unlike the restaurant variety, you can vary the amount of vegetables on it. So be creative and enjoy your frittata."

small onion, minced
chopped fresh cilantro
jalapeno pepper, seeded and minced
salt and pepper to taste
3 (6 inch)
eggs, lightly beaten
shredded Monterey Jack cheese
Loved this recipe. Haven't charred peppers before. I cheated a little by adding cilantro and jalapeno to a canned salsa. My guest had 3 helpings! The chips were very tasty. The poblanos added just a little heat, and flavor.
The salsa is too oniony, I recommend using a VERY small onion.
