Grilled Onions and Potatoes

"My family loves these tasty potatoes. There are never leftovers. Once the potatoes are all tucked in their foil packets, they can wait overnight to be grilled the next day. Great for camping. Check foil packets at 15 and 30 minutes to ensure they are not burning. May require a few more minutes to ensure all is cooked through."

  1. Preheat grill for medium heat and lightly oil the grate.
  2. Stir mayonnaise, Parmesan cheese, garlic, red pepper flakes, paprika, salt, and pepper together in a large bowl. Add potatoes and onion; stir to coat completely.
  3. Arrange aluminum foil squares on a work surface and spray each with cooking spray. Divide potato mixture between the four squares. Fold aluminum foil over potato mixture and crimp edges together to form a secure pouch.
  4. Cook on the preheated grill until potatoes are tender, about 30 minutes.

Delicious! We thinly sliced the potatos, mixed all together, then baked @ 400 degrees in the oven for 1 hour in a covered pan.

Great grill recipe! My son found it and has made it several times for his friends. Everyone raves about it. So easy to make and then just pop the packets on the grill. Be sure to flip half way through the cooking time.

didn't use onions- didn't have. Kory and I really enjoyed. Kids didn't love. Like scalloped potatoes. Pretty oily with all the mayo even though I decreased the amt

This recipe is delicious as written. The only change I made, I use smoked paprika for that added "grilled" flavor. After I flip them on the grill, I poke holes in the foil to let out the steam so they don't get mushy but stay crisp.

These potatoes were spectacular! I made them with a few tri-tips for my family and some friends. Everyone loved them. I made them to the recipe with the exception of the red pepper flakes because I didn't have any on hand. Thanks for sharing.

I just found this recipe and I've got everything together. I don't have pepper flakes (I can't find them and my husband would rather go hungry than try anything red). Do you mean hot peppers or sweet peppers? I tasted everything before I added the potatoes and then began to spoon out the rest into my mouth, it was so good. It's about to go on the barbecue and later I'll let you know what I think. Sorry about the pepper flakes, but I have never seen them in my grocery store, plus I don't want to end up in divorce court. Fingers crossed.
