Cut zucchini lengthwise into quarters, season with salt and pepper, and add a pat of butter. Then simply wrap in heavy aluminum foil and grill.

Lots of good things go into the buttermilk batter in this dish besides zucchini, but it 's this summer favorite that gives it flavor and moistness. Bakes up like a bread/cake/custard. Serve warm as a side dish.
