Great summer (or fall, if you are like me and still have zucchini to use up) side dish. I did use the broiler to make this, and it worked just fine. The garlic and parmesan add great flavor to the zucchini, but I would cut back on the butter a little. Ours seemed to be a little too wet and oily, even after baking. I am looking forward to trying this on the grill next summer.

Oh how I love this recipe! I use a zip lock bag and throw everything in to marinate then shake before placing on the grill. I don't know if I can ever tell my taste buds that it is time to try a different grilled vegetable recipe.

Next time I think Ill use shredded Parmesan Cheese instead of grated. Very juicy zucchini. I def make this again.

My word, was this GOOD! My husband, who is not a zucchini fan, gobbled it up and said how good it was. Super easy, super yummy! Going into our regular rotation. Served it with our spaghetti and turkey meatballs tonight...talk about a filling meal!
