Grilled Flat Iron Steak with Blue Cheese-Chive Butter

2 tablespoons red wine vinegar
2 cloves garlic, minced
1 tablespoon cracked black pepper
1 teaspoon dried rosemary leaves, crumbled
1 teaspoon dried oregano
1/4 teaspoon kosher salt
1/4 cup olive oil
1 1/2 pounds flat iron steak
3 tablespoons softened unsalted butter
1 ounce crumbled blue cheese
1 tablespoon chopped fresh chives
1/8 teaspoon cracked black pepper

DIRECTIONS
Whisk together vinegar, garlic, 1 tablespoon black pepper, rosemary, oregano, and kosher salt in a bowl along with the olive oil. Place the flat iron steak into a resealable plastic bag, and pour the marinade overtop. Squeeze the excess air from the bag and seal. Marinate in the refrigerator 30 minutes.
Preheat an outdoor grill for medium-high heat and lightly oil grate. Remove steak from the marinade, shake off excess, and discard the remaining marinade. Allow the steak to stand at room temperature for 15 minutes as the grill warms.
Mash together the butter, blue cheese, chives, and 1/8 teaspoon of black pepper; set aside. Cook the steak on the preheated grill to desired degree of doneness, about 5 minutes per side for medium-rare. Allow the steak to rest in a warm place for 10 minutes before slicing thinly across the grain. Serve with a dollop of blue cheese-chive butter.

100% wonderful!! Our grocer didn't have any flat iron steak. So we used the recipe with ribeye (adjusted the marinade for amount of meat) and ended up marinating about an hour (just in case these were thicker than flank steak). LOVE the marinade. Tonight we're making this with sirloin. I'm sure it will be delicious. Thanks for the great recipes!

This was delicious!!! I followed the recipe exactly, except I cooked my steak on the stove (it looked like rain). I have only recently begun cooking flat iron steaks, but they are so tender and delicious. This recipe was by far the best I have tried. The blue cheese-chive butter is also delicious on sliced baguettes! Thanks for sharing this recipe!

This was an excellent recipe and super easy to do. The only suggestion I would make it to double the marinade, that way it completely covers the steak. The only thing I "changed" was to omit the oregano (don't care too much for it's flavor) and substituted 1 T. of Italian Seasoning blend and added 1 1/2 tsp. of tarragon. The butter sauce is to die for. I really recommend making this for company...super, super easy and it's a recipe that you don't need to try first before serving. I served it along with grilled sliced zucchini and grilled garlic potatos. A fantastic summer meal that won't heat up your house!

My husband raved about this steak. We had some Omaha Steaks Flat Iron steaks. They were great this way. We have 2 more left and I'm sure we'll use this recipe again.

Wow, very good, the meat was tender and tasty. My family traditionally does not like blue cheese, but they loved the compound butter with chives, I don't think they even knew it was blue cheese, and I certainly didn't tell them. Thanks for the recipe.
